Teeling is one of these surprise brands that will knock you off your feet when you realize how darn good this brand is. I found out how unique Teeling was when I interviewed Stephen Teeling at The Federal in Long Beach. Not only did I get the history of the brand, I got a tasting session that blew me away. Each presentation of Teeling Irish Whiskey is better than the last from Small Batch to Single Grain to Single Malt.. each had their own unique spin on Irish Whiskey. All I can say is that each is amazing and worth the effort to find it and buy it!
The Ultimate Irish Coffee – The Teeling Whiskey Irish Coffee
Ingredients:
• 40ml Teeling Small Batch
• 120ml Freshly Brewed, Robust Coffee
• 20ml Spiced Stout Syrup*
• Fresh Cream
Garnish: Freshly Grated Nutmeg
Suggested Glassware: Hot Drinks Glass
Method:
• Preheat glass with some warm water and discard, add the Teeling Whiskey, stout syrup, brewed coffee and stir to combine.
• Warm a large spoon and gently pour the cream over the back of the spoon and onto
the coffee.
• Garnish with a light dusting of grated nutmeg and enjoy with friends!
Recipe for *Spiced Stout Syrup (makes approx. 1.5L of syrup):
Ingredients:
1L Irish Stout (Guinness or similar)
1kg Demerara Sugar
½ Cup Whole Cloves
½ Cup Pimento/allspice
3 Cinnamon Sticks
1 Whole Orange Zest
2 Inch Fresh Ginger Grated
Pinch of Salt
3 Whole Star Anise Pods
Method:
Add all ingredients to a saucepan and bring to the boil, allow to simmer for 10 minutes.
Remove from heat and allow to steep for 5 minutes.
Strain through a fine sieve and cheesecloth and bottle.
Keeps for 2 weeks refrigerated.
Teeling Winter Spiced Tea
Ingredients:
• 40ml Teeling Small Batch
• 10ml Vanilla Liqueur
• 30ml Apple & Cinnamon Simple Syrup (This link provides various recipes for this: Google Search
• 20ml Lemon Juice
• 30ml Wall & Keogh “Put The Cat Out” Lavender and Chamomile Tea (or closest alternative herbal tea)**
Method:
Make a weak tea by infusing 1tsp of Put The Cat Out Tea to 150ml boiled water and allow to infuse for 4-5 mins.
Allow tea to cool.
Prepare syrup according to appendix below.
Pour all ingredients into a cocktail shaker and shake vigorously.
Strain into a glass with ice.
Garnish with a fresh mint sprig and lemon peel.
