Featuring a new chef, John Keller, whose experience includes Nobu and Le Bernardin. Together Jamais and Keller created a twist on the menu with an Asian influence that didn’t diminish the integrity of the French cuisine. Signature dishes include the appetizer lobster brulee, the moonfish entree and a luxurious chocolate souffle. Keller’s philosophy is, “simple elegance without overdoing it.
Bruno Jamais has two wine cellars with bottles as expensive as $10,000 so there is a wide variety of wines from which to select.
Always willing to try something new, Jamais collaborated with Mixologist Agenor Macaluso using Bruno’s favorite liquor, Patron Platinum Tequila. Wanting something strong, yet smooth, Bruno liked the manner that the orange flavor in Cointreau or triple sec complemented and refined the taste of tequila. Agenor suggested using fresh orange rather than the liquer. Peach schnapps was blended with orange to add a hint of sweetness. Keeping to a more New York style, the drink was served "up" and so created the Platinum Bruno Martini that sells for $38.00.
