Experience a Unique Vegas Summer at Mandalay Bay Resort with Epic Bars & Restaurants!
While I love Las Vegas, I love the AC in the hotels most– along with great restaurants, bars, top notch pools and great spas. The last time I was in Vegas, I stopped into the Mandalay Bay since I needed to meet up with a client for lunch. Dreamy amenities with the amazing pool and lots of other cool things to do but the restaurants and bars got my attention in spades.
Let’s talk FOOD!
The dining scene at Mandalay Bay has been elevated, and award-winning Chef Akira Back is the executive chef at the latest avant-garde eatery, Kumi Japanese Restaurant + Bar
In Japanese, Kumi means beautiful, which is the perfect description for this inviting and engaging venue
Two popular and delicious items not to be missed at Kumi are the pork belly roll and whitefish carpaccio
Chef Akira Back features a modern Japanese menu with a Korean American twist, which will surely continue to impress even the most discerning customers
Behind the scenes: Chefs are working to put the finishing touches on a meal
Check out this amazing dish:
Kumi Japanese Restaurant + Bar not only serves delicious Sushi but also serves a variety of Signature Entrees. Toban Filet made w/ Mixed Mushrooms and a Nanbanzu Soy
Kumi sounds stunning right? Just the right Asian food featuring both Japanese and Korean-American trends. Love the concept. (Now to get back to Vegas to eat there!)

For the “coolest experience” in Las Vegas, make an expedition to Minus 5° Ice Bar
Located within the Shoppes at Mandalay Place, everything except for the floor and the ceiling is made out of ice, including the bar, the shot glasses and even the chandeliers. All the gear to keep you warm is provided (Thank goodness. It makes the summer heat almost a welcome alternative. Instead, Minus5 provides everything you need to stay cuddly warm including everything you need to sip!)
Slip into toasty gloves and a warm parka or faux-fur coat, and surround yourself in pure, crystal-clear glacial ice that’s maintained at exhilarating Arctic temperatures!Explore artistic ice architectures, exquisitely crafted ice rooms and upbeat music at Minus 5° Ice Bar, the perfect place for a refreshing and unforgettable experience

I like Vegas during the fall and winter but now I have a bigger reason to go when it’s scorching hot! Kumi and Minus5 make it easy to go visit when the temperature is triple digit because I can eat astonishingly well and also have a lot of fun in the freezing cold of Minus5!
I can run from pool (with a pit stop for clothing) and then hit the frigid temps for rocking good sips at Minus 5.
If you are planning on visiting Vegas for fun or business (or a little of both), do check out the Mandalay Bay. It’s absolutely lush!
