Cliff’s Edge might be new to you– or maybe not. Either way, it doesn’t matter because you can bring some of the “juice” from Cliff’s Edge to your home courtesy of these lovely cocktails. I won’t say you will get it exactly the same as Cliff’s Edge Mixologist Richard Swan will – but it’s worth either the drive or the trial run to get these things right! Given that there are hand-crafted ingredients and no proportions given, you might want to make the drive to Silverlake for this one at some point this week. Make sure you eat too. GREAT food!
Summer is ‘prime time’ at Cliff’s Edge, with its gorgeous patio anchored by an iconic giant tree one of LA’s premier outdoor dining destinations. The warm balmy evenings bring a crowd of locals as well as those from farther afield, to relax, enjoy some great food from Chef Vartan Abgaryan, and a glass of wine or a cocktail on the terrace surrounded by rustling bamboos ansd seemingly a million miles away from the bustle of Sunset Junction, just yards away.
To set the tone for these summer evenings, Cliff’s resident mixologist Richard Swan has created a new menu of five summer drinks that stand alongside longstanding, popular Cliff’s Edge staples. Says Swan,
“The summer cocktail list is all about cool refreshment and seasonal flavors. Here you’ll see familiar concepts, with some twists here and there. Emphasis here is on fun playful cocktails, with flavors and ingredients that will pleasantly surprise.”
Here are descriptions of the summer drinks in his own words:
‘Tropical Mike’
Ingredients: Rhum J.M Agricole / Passionfruit/ House-made Falernum/ Lime/ Tangerine

A Mai-tai inspired cocktail that came about when one of Cliff’s longest standing regulars (Mike) and I were trying to make the ultimate tropical vacation cocktail. This is the censored version, as the original was designed to ‘get you where you want to go’ in just one drink. Brave souls can order the ‘Tropical Storm Mike’ as long as they have a cab on the way! It’s tart and fruity, and the Martinique Rhum has a unique flavor profile that I really love.
‘Triple Bogey’
Ingredients: ‘Old Weller 107’ Wheated Bourbon/ Ginger-Peach Black Tea/ Lemon/Agave/Peach Bitters
No sugar coating it, this is a spiked ‘Arnold Palmer’. I’ve elevated it by finding a really fantastic tea that suits the build of the drink, and using overproof Bourbon so you still feel a kick. It’s the perfect porch-sipper, and my friends and I make them at home by the pitcher full.
Staycation’
Ingredients: Nolet’s Silver Dry Gin/White Safflower Tea/ Honey/ Grenadine/ Lemon
Continuing the tea theme, this is a simple classic cocktail made special by infusing London Dry gin with an amazing white safflower and rose hip tea. It’s incredibly complex and aromatic. We add a drop of house made grenadine to get the perfect hue from the drink, like the inside of a conch shell.
‘Surfer Rosa’
Ingredients: Sino Blanco Tequila/ Strawberry Shrub/ Cilantro/ Jalapeño/ Lime/ Chili Salt
Another drink that has us considering selling cocktails by the pitcher-full. The strawberry shrub gives the summer flavors, and the cilantro and jalapeno add the spicy kick. This is also fantastic with mezcal! We garnish it with a dash of Chef Vartan’s lime-chili salt, which is a component of his Chicharron dish. We humbly suggest that you order them as a pair.
Thanks to Richard Swan for the KILLER cocktails. I will have a fun time trying to duplicate these, though Staycation and Triple Bogey sound like they might be the easiest to do.l
