12 Drinks of Christmas, Day 11! Celebrate New Year’s Eve with Haikara Momo or Yuzu!!

 

It’s New Year’s Eve and it’s time for party! It doesn’t matter if it’s 60 people, a crowd of 100+,  a couple or just yourself, you should treat yourself well today and especially tonight.  In light of that   night’s events and parties, I chose to feature Haikara’s Yuzu and Momo Sakes! I wrote a great post about the brand  about a month ago- and when I saved it, it went *Poof*  and vanished. To get that post live then, I wrote about it again here !

Haikara is produced at Umenoyado located in Nara, Japan considered the birthplace of sake because its cold winters are ideal for making good sake. Umenoyado has been producing traditional Japanese sake in this same location since 1893 by a team of Tojis who have been creating sake for generations. Haikara uses all local ingredients: water, rice and fresh fruits which are artfully combined in small batches. Each batch has its own characteristics which must be balanced to create each delicious bottle of Haikara.

This masterful sake combined with exotic Japanese fruit juice in every studded bottle is a bit of a rule breaker. Produced in small batches with local ingredients, Haikara will delight your senses.
Sake was considered godlike and as such was often created in shrines and temples. Today sake is produced by “Tojis” (sake masters) but is still considered to be a very special process linked to nature.

 

Rice

Rice is of course an essential ingredient in sake making. We start with high quality rice that is grown locally in the Hyogo Prefecture and harvested using traditional methods. We create a beautiful Junmai sake using our own time proven methods.

 

Yuzu

Yuzu is a Japanese citrus fruit which adds a bright nose and a refreshing, tart flavor to Haikara. Like all of our ingredients, the yuzu fruits are selected for quality and ripeness from local farmers in Shokoku and Kyushu. Because our production method includes more natural yuzu juice content the sensation and prominence of this flavor is heightened in Haikara.

Momo

Haikara Momo is made with white peaches which are grown with extra care in Wakayama and Yamanashi. Each Momo fruit is covered by a bag to protect the delicate soft white skin while it ripens to perfection. A momo is generally larger and softer than western peaches and has been cultivated in Japan for millenniums, dating as far back as 4400 BC. The Momo flavor provides a delicate and elegant sweetness that beautifully complements the sake.

 

COCKTAILS:

Grapes at Midnight: Created by: Matt Seigel

Haikara-Grapes-At-Midnight-

Ingredients:

1½oz Haikara Momo Sake
½ oz Plum Wine
½ oz Carpano Antica
¾ oz Amontillado Sherry

Method:
Add all ingredients to a Mixing Glass.
Add ice.
Stir until properly chilled and diluted.
Strain into a chilled Coupe or Nick & Nora that has been rinsed with Mezcal.

Recipe Notes:
Inspired by the plum wines that I first tasted at exotic tiki and Asian restaurants in my early work years, this cocktail is both a love of plums and the exotic memories of those meals. Plums are both a delicious fruit and go extremely well with savory foods and herbs.

 

Haikara-Sugar-Plum-Drop

 

Ingredients:

2 oz Haikara Momo
½ oz rum
¾ oz lemon juice
Dash of simple syrup
½ black plum diced
2 slices fresh ginger

Garnish: Rosette from plum skin
Glassware: coupe

Method:

Make plum rosette and place into bottom of coupe glass.
In the bottom of a cocktail shaker place plum and simple syrup.
Muddle thoroughly, add rest of ingredients and ice.
Shake vigorously until the outside of the shaker is frosted and beaded with sweat.
DOUBLE Strain into coupe glass.

 

 

Haikara Spritz: Created by: Nick Mautone

A riff on the Aperol Spritzonly better. We like Haikara Yuzu slightly better as its exotic flavor just feels more yummy. The Haikara Momo spritzer is also awesome just more fruity.

 

Haikara-Spritz-14398-2

 

Ingredients:

2 parts Haikara Momo or Haikara Yuzu
1 part Aperol
2-3 oz seltzer

Garnish: Round Slice of Orange
Glassware: Large round wine glass or rocks glass or highball

Method:

Measure all ingredients into prepared glass.
Start with Haikara, then Aperol, then seltzer, stir gently to maintain fizz.
Garnish.
