Red Boat Fish Sauce has partnered with Valerie Gordon, acclaimed chocolatier and owner behind L.A.’s Valerie Confections to create a new chocolate bar using Red Boat Salt, which is infused with their famous fish sauce. This collaboration will be the first of several chef-driven products to launch in 2020 from Red Boat, but what makes this partnership extra sweet is that it coincides with the beginning of Tet, Vietnamese New Year (January 25, 2020).

“We are so excited to be launching this new collaboration with Valerie Confections just in time to celebrate Lunar New Year,” shares Diep Tran, Head R&D Chef at Red Boat Fish Sauce. “This was a great opportunity to work with such a talented team to create a new story for Red Boat and the versatility of our brand. Our new Salted Cashew Chocolate Bar celebrates a bold new interpretation on a classic sweet treat.”

Red Boat’s Salted Cashew Chocolate Bar is made with 61% bittersweet dark chocolate and crunchy bits of cashews that have been lightly salted with Red Boat Salt. The result is a deeply rich chocolate with a perfect balance of crunch, salt, and umami.

“When Red Boat reached out to me with their ideas to create a new chocolate bar using Red Boat Salt I was thrilled,” adds Gordon. “I’ve always been a fan of the brand and was excited to work with them on a chocolate bar that told a story by incorporating the bold and unique flavors of their fish sauce.”

Red Boat’s new Salted Cashew Chocolate Bar is currently available through their online store at RedBoatFishSauce.com.

About Red Boat:

Ever since moving to the United States, Cuong Pham was hungry to recreate the tastes and smells of his childhood in Saigon. But not even the vibrant Asian markets of San Francisco offered the intensely fragrant first-press fish sauce, nước mắm nhi, that Cuong remembered from Vietnam. In 2006, Cuong decided that if he couldn’t find it, he would make it — and started Red Boat Fish Sauce.  Returning to Vietnam, Cuong expanded a small, family-run facility on the island of Phú Quốc. With its clear waters and traditional fishing communities, Phú Quốc has long been renowned for producing the world’s greatest fish sauces. Cuong partnered with expert fishermen and revived a centuries-old fermentation tradition.
Today, the Red Boat brand is stronger than ever. In an era where transparency, traceability, and sustainability reign supreme, Red Boat is just as committed to quality ingredients and its time-honored fermentation tradition as the day it was founded. That means no additives, no preservatives, and no flavor enhancers. Just the purest fish sauce on earth.

About Valerie Confections:

Founded in 2004 in Los Angeles by chocolatier Valerie Gordon and co-owner Stan Weightman Jr., Valerie Confections is recognized as one of the top artisan confectioners in the country. Entirely self-trained, Valerie started her namesake company with six flavors of chocolate-dipped toffee, quickly gaining an ardent fan-base for her modern interpretation of classic chocolates and confections, elegant gift packaging, and commitment to using the very best, all-natural ingredients.

Since those early days, the Historic Filipinotown boutique expanded exponentially, and now includes a popular line of petits fours, handmade preserves, cakes, wedding cakes, pastries, coffee, tea, sandwiches, and a small larder, in addition to catering. In 2013, Valerie and Stan opened Valerie Echo Park, now a staple of the Echo Park community. Later that year, Valerie published her first cookbook, Sweet (Artisan Books), which went on to be a finalist at the James Beard Awards and is filled with her beloved recipes, helpful tricks, and recreations of classic desserts from lost Los Angeles restaurants.

Customers can find Valerie Confections at select retailers throughout the country, and also order an array of classic items and seasonal treats through www.valerieconfections.com, with shipping available nationwide.
