Looking to get your hands dirty and cook up something delicious? Surprise dad with a Proper Feast! For Father’s Day, make dad a Proper Peppercorn Steak to pair with a glass of Proper No. Twelve or his favorite Proper cocktail
A PROPER FATHER’S DAY FEAST: PROPER PEPPERCORN STEAK SAUCE
Ingredients:
• 2 tbsp Proper No. Twelve Irish Whiskey
• 1 tbsp cracked black peppercorns
• 1 small shallot, finely chopped
• 1 large clove of garlic, minced
• 3 tbsp butter
• 3/4 cup beef broth
• 1/2 cup heavy cream
• Worcestershire sauce (optional)
Recipe:
1. Cook steak to your liking, then remove and cover while you make the sauce.
2. Add peppercorns to the same pan used to cook the steak and heat for 1-2 min.
3. Add shallots, garlic, and 1 tbsp butter. Sauté over medium heat until shallots
soften.
4. Add Proper No. Twelve Whiskey and bring to a simmer for 1-2 minutes. Deglaze
the pan by stirring with a wooden spoon, incorporating any remaining bits from
the steak.
5. Add the beef stock and bring it to high heat. Reduce the sauce by half (4-5 minutes).
6. Mix in heavy cream and simmer for 1-2 minutes, stirring continuously.
7. Remove from heat, add remaining butter and whisk for 1-2 minutes. Salt to taste.
Optional:
Add any juice from resting steak and a dash of Worcestershire sauce.
8. Pour over steaks and serve—pairs best with a Proper on the Rocks!
PROPER MANHATTAN

Ingredients:
• 1 oz Proper No. Twelve Irish Whiskey
• 1 oz Sweet Vermouth
• 1 oz Green Chartreuse
• Garnish with orange peel
Method: Pour all into a glass filled with ice and stir well!
DUBLIN 12 OLD FASHIONED
Ingredients
• 2 oz Proper No. Twelve Irish Whiskey
• 1 bar spoon of simple syrup
• 2 dashes angostura bitters
• 2 dashes angostura orange bitters
• Lemon wedge
• Cherry
Directions
• In a lowball glass, add Proper No. Twelve Whiskey, simple syrup, and bitters
• Add ice to the glass and stir together
• Garnish with lemon wedge & cherry
PROPER & GINGER
Ingredients
• 2 oz Proper No. Twelve Irish Whiskey
• 3 oz ginger ale
• 1 lime wedge
Directions
• Fill glass with ice
• Pour Proper No. Twelve over ice
• Top with ginger ale
• Stir
• Garnish with a lime wedge
PROPER SOUR
Ingredients
• 2 oz Proper No. Twelve Irish Whiskey
• .75 oz fresh lemon juice
• .75 oz simple syrup
• Garnish with lemon wedge & cherry
• Ice
Directions
• In a shaker, add Proper No. Twelve whiskey, fresh lemon juice & simple syrup
• Strain into a rocks glass filled with ice
• Garnish with a lemon wedge & cherry
These cocktails sound like some serious fun for Father’s Day. The recipe for the steak sounds amazing! Now that’s a steak I would love to cook!
