National Rum Day is August 16.. and while that might seem a long way off, it’s not. It’s less than 10 days away! It’s time to get ready for a bit of a celebration because to me “rum = summer cocktails”! There are many ways to drink rum in the Caribbean! I n honor of Rum Day (August 16), I would like to share a rum cocktail recipe that has been around for generations. Both the recipe and the brand of rum are considered more of a tradition, than a simple happy hour.
This beloved cocktail is called the Haitian Rum Sour and it’s made with Rhum Barbancourt 4 years.
The recipe was giving to us by Delphine Gardere, who is 5th generation Gardere and new CEO of the Rhum Barbancourt Distillery, together with some tropical-flavored memories.
Delphine comes from a big family – her grandmother had 8 siblings! – and recalls long happy hours with relatives and neighbors at her grandparents’ house which was located in the middle of a residential area, so everyone would stop by after work for a drink. Her father then took over and started making Rum Sour for her and her friends as well, becoming so famous around Haiti that even the restaurants started using the family recipe.
Now it’s Delphine’s turn who is bringing a strong and innovative input to the table for the future of the distillery, without forgetting the heritage and what made her family what it is now, and this includes drinking a Rum Sour at 5:00 pm with the community.
How to Mimic the Gardere’s Happy Hour:
Well, first thing, you need a bottle of Rhum Barbancourt 4 years, then make sure to prepare the cocktail with lime and not lemon, if you want to be part of the family tradition!
Rhum Barbancourt 4 years is a gold rum made with pure sugar cane juice (not molasses) at the Barbancourt Distillery in Haiti. It has an elegant and fresh nose that feels smooth and rich on the palate. Sharp spices cut through a soft, layered structure with pleasantly familiar heat – rum that is truly perfect when mixed in cocktails. (Aged 4 years, 86 proof)
Haitian Rum Sour!
Here’s the complete recipe for it.
Ingredients:
– 4 shots of Rhum Barbancourt 4 years old (3 Star)
– 1/4 of a shot of lime juice,
– refined sugar (to your measure)
– 3 drops of bitter
Method:
Dip the rim of the glass into some water or Rhum Barbancourt,
Then dip the rim of the glass into sugar,
Pour in the shots of Rhum Barbancourt 4 years old
Then pour in the shots of Rhum Barbancourt 4 years old,
Add in the lime juice and then 3 drops of bitters!
Stir a couple of times to mix, and you are ready for your cocktail.
10 Things to Know about Rhum Barbancourt

1. Rhum Barbancourt is made from 100% sugar cane juice, not molasses;
2. Rhum Barbancourt has been distilled in Haiti since 1862;
3. Rhum Barbancourt owes its name to its creator, Dupre’ Barbancourt, who moved to
Haiti from the Cognac region in France;
4. The Barbancourt distillery remains faithful to the principles of its founder who applied
the traditional French distillation method to sugar cane juice and the aging process in
oak barrels from Limousin;
5. Sugar canes are harvested and delivered directly to the distillery, half of by mules only;
the other half are transported by mules to the tractor, then on the tractor cart to the
distillery;
6. The juice is fermented with an exclusive Barbancourt yeast that brings out fruity
aromas;
7. Four different type of Rhum Barbancourt come out of the distillery, each one with their
unique and distinctive trait:
–15 years old Estate Reserve,
–8 years old Réserve Spéciale
–5 star, the 4 years old 3 stars
–and White Rhum;
–the first three are aged in oak barrels, the White in stainless tanks;
8. There is a fifth Rhum Barbancourt called Pango Rhum which is an aged rum,
macerated with pineapples and mangos;
9. Rhum Barbancourt is Haiti’s leading brand of rum;
10. Rhum Barbancourt’s distillery doesn’t waste anything: sugar cane juice leftovers are
burnt into a furnace and used to make electricity
