Are you working from home these days? It has its upsides, like no more commute, and no
more going out for lunch and spending too much money. But what are you eating for lunch at home? Maybe you already have a few go-to’s, or you’re microwaving frozen burritos. Work from home is here to stay for many of us though, so you need a few more healthy recipes up your sleeve.
We know you’re pressed for time and don’t always know what to make, that’s where Nooddle comes in. Nooddle is a fast growing app who’s secret sauce is in their recipes.

Here’s our favorite work from home lunch recipes from Nooddle.
All the recipes are two portions. So make some lunch for your significant other, or save some leftovers for tomorrow!
Smoked Salmon and Feta Salad
When you have no time, raid the fridge for a salad!
Ingredients:
3 oz Smoked salmon
2 oz Feta Cheese
1 Avocado
10 Cherry Tomatoes
4 oz (~1 -2 cups) of Lettuce
Method:
- Wash and cut or tear up the lettuce leaves into smallish pieces
- Wash and halve the cherry tomatoes
- Chop the avocado into pieces
- Arrange everything in your bowl
- Add the dressing of your choice. A simple lemon, olive oil, and salt and pepper dressing is perfect. Or consider a yogurt or cream-based dressing.
Fresh Cheese, Tuna, and Tomato on Toast

The perfect recipe for a quick lunch with ingredients everyone has on hand already!
Ingredients:
1 Tomato
2 oz Fresh Cheese – cream cheese, goat cheese, ricotta, queso fresco, etc
1 small can of Tuna
2 slices of bread – sourdough goes best
Method:
- Toast the bread and while it’s toasting drain the tuna and slice the tomato
- Layer the tomato, fresh cheese, and top with tuna on each slice of toast
- Optional: Drizzle with olive oil and crack a little fresh pepper on top
- Optional: Make a bed of arugula on each piece of toast before adding the other ingredients
Pasta, Lentil, and Goat Cheese Salad

You can make this wonderful salad in the moment, or make ahead of time and eat it at lunchtime for two days in a row. With the lentils added in it packs a nutritional punch.
Ingredients:
1 Tomato
4 oz (~1 -2 cups) of Lettuce
2 oz Goat Cheese
¼ of a Red Onion
7 oz Pasta – Orzo or similar
5 oz of canned Lentils
Method:
- Cook the pasta according to the directions
- Rinse the lentils with running water
- Wash and dice the tomato, wash and cut the lettuce in thin strips, mince the onion
- Cube the cheese
- Combine in a bowl and mix well
- Add the dressing of your choice.
A simple olive oil, red wine vinegar, and salt and pepper dressing is perfect.
Tips:
- For a vegan alternative, replace the cheese with a vegan cheese of your choice.

Turkey Pesto Sandwich with Sun-Dried Tomatoes

The perfect hot sandwich for a quick work from home lunch.
Ingredients:
8 pieces of Sun-Dried Tomato
2 Slices of Cheese
4 Slices of Turkey
2 Tbsp of Pesto
4 Slices of Whole Wheat Bread
1 Tbsp of Olive Oil
Method:
- Spread the pesto on each slice of bread. Make sure to cover each slice.
- For each sandwich, layer a slice of turkey, a slice of cheese, sun-dried tomatoes, and top with another slice of turkey.
- Pour the olive oil in a skillet, let it get hot, and lightly toast the sandwiches on each side until golden brown and the cheese is melted.
If needed, turn down the heat to medium-low and keep toasting and flipping occasionally.
Tips:
- Use butter instead of olive oil for a rich, slightly less healthy, sandwich.
Vegan Mexican Salad

When you want a light Mexican lunch sans carne, this salad hits the spot! So easy!
Ingredients:
1 handful of Cilantro
2 Tomatoes
¼ of a Red Onion
5 oz Pinto Beans|
1 cup Rice
Method:
- If you don’t have precooked rice or beans then start with cooking those, though the beans will add a considerable amount of time. If you’re going to cook the rice, give it a light toast in oil before boiling the rice.
- Finely mince the onion
- Wash and dice the tomatoes
- In a bowl combine everything and garnish with cilantro
- A perfect dressing for this is a squeeze of lime or a dash of your favorite salsa.
Zucchini Noodles with Chicken and Almonds

If you have a little bit of time on your hands between zoom meetings, try out this delicious healthy recipe. It’ll leave you full of energy for the afternoon.
Ingredients:
1 clove of Garlic minced
1 Chicken Breast
½ of a Lemon
1 large Zucchini
1 oz of sliced Almonds (~ 1 Tbsp)
3 Tbsp Olive Oil
2 pinches of Salt
Method:
- Wash the zucchini and use a zoodler to cut into long zucchini noodles. If you don’t have one you can cut it with a knife in long, very thin strips.
- Slice the chicken breast in thin strips and season with a little salt
- Mince the garlic, heat a little of the oil in a skillet, add the zucchini noodles and garlic and cook for about 5 minutes on medium heat. Add a pinch of salt and zest ½ teaspoon of lemon on the noodles. Cook for a minute or two longer, and then transfer to a plate.
- Add the chicken strips to the same skillet and a little more olive oil and lightly saute the chicken. While the chicken is cooking, add a little salt and the juice of the lemon. Cook until the chicken is golden and done. Transfer to the plate.
- In the same skillet, toast the almonds lightly.
- Arrange the zucchini noodles, chicken, and almonds on top on a plate.
Tips:
- Feel free to crumble goat or feta cheese on top to make it even tastier
- If you have sesame seeds, toss some in with the almonds
- If you don’t have sliced almonds, crush a small handful of almonds
Jamon Serrano, Melon, and Mozzarella Salad

Bring the Mediterranean to your house with this super easy, super tasty, refreshing salad.
Ingredients:
4 oz (~1 -2 cups) of Lettuce
6 Cherry Tomatoes
2 slices of Melon
4 oz Mozzarella Cheese
4 slices of Jamon Serrano
Method:
- Wash the lettuce and place in a bowl
- Slice the cherry tomatoes
- Chop the melon in medium-sized cubes
- Depending on the mozzarella you use, cut it into small pieces, or use little mozzarella balls whole
- Arrange everything in the bowl
- Add the dressing of your choice. A simple olive oil, balsamic vinegar, and salt and pepper dressing is perfect.
Tips:
- If you can’t find Jamon serrano, prosciutto works perfectly too.
- Feel free to toss in some avocado

Personally speaking, I will download this app. I need to be making the NOODDLE lunches because I am spending waaaaaaay (!!!) to much time cooking meals. My husband doesn’t cook. I am stuck doing the cooking every.single. day. I want to have lighter meals — which would be good for both of us.
PLUS there are vegan and vegetarian recipes so that everyone in my family can have a plant-based meal quickly and easily!
