Check Out these Exotic Foods and Treats for Valentine’s Day

While it might seem a bit odd to some to be doing some major cooking for Valentine’s Day, but it’s a great way to show someone you care and that you want to do something special for them (and yourself) for this day. After all, how much time do you really have on a daily basis to test out some new recipes? Not often, I am betting. (I certainly don’t have a lot of time to do that).

 

I am going to share some really great recipes that while it might seem hard to make these dishes, they aren’t really that difficult. Mostly the recipes I am sharing (and the brands of the foods that are featured) are a bit more exotic but will  be such a tasty meal that your
“special someone” will be floored by the great meal.

The various foods I am featuring are not meant to be done all in one day. Pick out your main dish and then add some of your regular “go-to” dishes and use nice china and/or tableware to make the meal even more special.

Regal Harvest Lemon Rice: Servings: 4

Ingredients: 

7 Cups cooked Regal Harvest Basmati Rice, spread out on a baking sheet to cool

3 Tablespoons canola oil

2 teaspoons mustard seeds

1 Tablespoon Yellow Split Peas (Indian lentils)

1/2 cup cashews, chopped

3 whole dried chiles
(remove stems and crush or  use 1/2 teaspoon of crushed red chili)

1 teaspoon cumin seeds

3/4 teaspoon turmeric

1 large red onion, diced

1/2 cup scallions, sliced thinly crosswise

1 teaspoon salt (or to taste)

1/4 cup water

1/4 cup lemon juice

4 cilantro sprigs for garnish

1 lemon, cut into wedges for serving

 

Method/Cooking Steps:

1. When rice is cool, combine oil, mustard seeds, yellow split peas, and cashews in a large skillet or wok over medium heat.
Cook, stirring 1-2 minutes or until mustard seeds start to pop. (Have cover ready to prevent splattering.)
Immediately add the chiles, cumin seeds, turmeric and cook for 1 more minute or until cashews have turned golden brown.

2. Then add the onion, scallions and salt and cook, stirring until the onion is softened, about 4-5 minutes.

3. Add the cooled rice and stir gently until the rice is uniformly yellow.
Then drizzle the water all around the rim of the pan and stir again gently.
Add the lemon juice and cook uncovered until the rice is warmed through, about 2 minutes.
Taste for salt and serve immediately.

Finished LEMON RICE: 

I know this recipe sounds a bit complicated, but the basics of the actual cooking is pretty straightforward.
Imagine chicken, pork, or even an array of veggies to serve alongside this great rice dish!

 

CHEF SHAMY

Garlic Parmesan Baked Chicken Wings–Serves: 12

Ingredients:

2 lbs bone-in chicken wings

½ cup Chef Shamy Garlic Butter, melted

2 T fresh chopped parsley

⅓ cup Parmesan cheese

 

Method/Cooking Instructions!

Preheat oven to 450° F

Place chicken wings on a wire rack of a roasting pan.
Bake at 450° F for 20 minutes.
Flip, then bake for an additional 15-20 minutes –or until internal temperature reaches 165°.

While the chicken wings are cooking, pour the melted Garlic Butter into a bowl.
Add parsley and Parmesan, then mix to combine.

When the chicken wings are cooked, put them into bowl.
Toss in the butter mixture until coated.

Think about these chicken wings as an appetizer or part of the main course!

Chocolate Rice Krispie Treats  -Serves: 12

 

Ingredients

4 T Chef Shamy Chocolate Butter

10 oz package marshmallows

6-7 cups rice cereal

Instructions

In a large saucepan or pot, melt Chocolate Butter over low heat.

Add marshmallows and allow them to melt, stirring frequently.

Remove pan from heat, then stir in cereal until fully incorporated into the chocolate marshmallows.

Press mixture into a lightly greased 9×13 pan.

Allow to set for 1 hour, then cut and serve.

This chocolate Rice Krispie Treats will be so tasty!!

Baked Brie with Golden Berries Superfruit Spread and Pecans by Rebecca Lang  Serves 4

 

Creamy warmed cheese topped with a sweet and slightly tart spread of Golden Berries is a combination that is perfectly balanced.
It’s the ideal holiday starter and can be served in about 15 minutes.
Baking the Brie on a sheet of foil makes moving the gooey cheese to a serving platter much easier.

 

Ingredients:

1 (8-ounce) wheel Brie cheese

1/4 cup LlamaLand Golden Berries Superfruit Spread

1 teaspoon fresh thyme leaves

1 heaping tablespoon chopped pecans

Thyme sprigs, for garnish

Crackers or French bread, for serving

 

Method/Cooking:

Preheat the oven to 350˚F.

Trim the rind off the top of the Brie, leaving a 1/4-inch border around the edge.
Discard the trimmed rind.

Combine the Golden Berries Superfruit Spread and thyme in a small mixing bowl.
Spread over the top of the trimmed Brie.

Bake for 7 minutes.
Remove the Brie and arrange pecans over the spread and bake for an additional 3 minutes.

Garnish with thyme sprigs and serve immediately with crackers or French bread.

 

When this dish is finished and put on the table or buffet, people will be astonished at how beautiful this dish is.
Once they taste the Baked Brie with Golden Berries Superfruit Spread and Pecans,  people will focus on eating this very beautiful (and tasty!) dish. It almost makes you  not want to eat this baked brie, but the spread over the brie makes you absolutely want to try it.

The superfruit spread really ups the flavor profile of this dish!!
