–Grammy-winning Mariachis de Cindy Shea will appear during Fuego’s legendary, waterfront Sunday brunch on Sunday, September 5 from 11:30 a.m. to 3:30 p.m.,
–Francisco Reyes will perform live Latin jazz for Saturday brunch on Saturday, September 4 from 11:30 a.m. to 3:30 p.m.
— Live Latin guitarist Andres Vadin will be performing on Fuego’s patio on Friday, September 3 and Saturday, September 4 from 6-9 p.m.
–Don’t forget the suntan lotion. A poolside BBQ from 11:00 a.m. to 5:00 p.m. with music by Mike the Steel Drummer from 1:00 p.m. to 4:00 p.m. is offered on Saturday and Sunday.

Fuego’s a la carte brunch menu is served Saturday and Sunday from 11:00 a.m. – 4:00 p.m.
— For starters, try the Barbacoa Quesadilla made with short rib barbacoa, a blend of Mexican cheeses, onion, cilantro, and a mango chipotle honey salsa.
–The Totopo Ahi Tuna salad is seared Ahi tuna atop baby wild arugula, avocado, scallions edamame, cucumber, mango, jicama mixed with a soy-ginger vinaigrette. A taco grill station offers cilantro lime chicken, beef barbacoa, grilled skirt steak, and a fish of the day.
–For some of the best chilaquiles in the region, try the Al Pastor Chilaquiles with adobo marinated pork, fried corn tortillas, tomatillo salsa, serrano cream, and fried eggs.
–A Fuego favorite, Ropa Vieja is Cuban-style braised short rib, black bean purée, crisp corn tortillas, pickled cabbage, caramelized plantains, and serrano cream.
Fuego has a fabulous bar with one of the region’s largest collections of tequilas.
–The Signature Fuego Margarita is reposado tequila, Cointreau, lime, and agave nectar and is available as skinny, spicy, strawberry or mango.
–For the adventurous, the Spicy Paloma is house-infused jalapeño reposado and grapefruit lime.
Fuego, the modern, Latin-infused indoor-outdoor restaurant and lounge, offers a unique seaside setting featuring 13-foot-tall glass walls that fully retract with seating on the patio area. Hotel Maya’s Lobby. so very colorful and very relaxing.
While I have not stayed at Hotel Maya, I have had both lunch and dinner at Fuego. The food is fabulous and the cocktails are amazing. The music is the perfect touch for such a great hotel and restaurant.
