Give a Fig for 4 Labor Day Cocktails!

The secret to un-FIG-ettable drinks:
Blue Ribbon California Figs + Fig Ingredients.

 

 

Celebrate the season (or rather the change of seasons) with these fig-based cocktails!

Fig White Wine Sangria with Ginger Ale

Ingredients
2 tablespoons sugar
2 tablespoons water
2 oranges
2 lemons
1 1/2 bottles crisp white wine
2 cinnamon sticks , broken in half
8 ounces Orchard Choice® or Sun-Maid® California Golden Dried Figs , stems removed and sliced lengthwise
1 green apple , cored and cut into cubes
2 cans ginger ale or more as needed

Instructions
Combine the sugar and water in a small bowl.
Microwave for 1 minute—the sugar should be dissolved.
Set aside.

From 1 orange and 1 lemon, trim the citrus peels.
Using a vegetable peeler, trim long strips of peel from both the orange and lemon.
Twist the peels so they will release some of their oil.
Cut supremes from the orange and lemon, then cut the citrus slices into small chunks.
Place the citrus peel twists and chunks into a large bowl.
Juice the leftover pith and membranes into the bowl.

Juice the remaining orange and lemon into the bowl.
Add cinnamon sticks, sliced golden dried figs, apple chunks, and simple syrup.
Stir with a wooden spoon until evenly distributed.
Transfer fruit to a pitcher and pour the wine over it, giving one last final stir.
Chill for 3 hours or longer—the longer it steeps, the more wine-infused the fruit will be.
Pour the sangria into glasses.
Just before drinking, top off and stir in ginger ale as desired.

 

Fig Bourbon Spritzer

Sweet and just a little bit sour, a balsamic fig shrub made with Mission Figs is the key to this surprising cocktail.

Ingredients
1 3/4 fl oz bourbon
1/4 fl oz fresh grapefruit juice
12 fl oz balsamic fig shrub
soda water
grapefruit peel for garnish
rosemary sprig for garnish

Instructions
Fill a highball glass ¾ of the way with ice cubes.
Place bourbon, grapefruit juice, and fig shrub into a cocktail shaker with a handful of ice cubes.
Shake for 10 seconds and strain into the glass.
Top with soda water.
To make the garnish, slice a round of grapefruit peel.
Using a small sharp knife, score the center of the peel.
Thread the rosemary sprig through the center cut.
Add garnish to the top of the cocktail.

 

 Ginger Fig Margarita

Ingredients:

Fig-Infused Mezcal
1 cup Orchard Choice or Sun-Maid California Figs stemmed and sliced
1 3/4 cup mezcal
Ginger Syrup
1/2 cup granulated sugar
1/2 cup water
3 tbsp fresh ginger peeled and chopped

Fig Margaritas
2 ounces Fig-infused Mezcal
1/2 ounce Ginger Syrup
juice of 1 lime
ice

Garnishes
coarse salt
lime wedges
orange wedges
Orchard Choice or Sun-Maid California Figs

Instructions

Prep for the cocktail: Make Fig-Infused Mezcal:
Combine figs and mezcal in a glass container with a tight-fitting lid.
Seal and leave at room temperature to infuse for 1 week.


Mixing the cocktail:

Pour into a blender, blend until figs are completely puréed.
Strain through a fine mesh strainer into a large measuring cup.
Press on the solids to extract all mezcal.
You should have about 1 cup of Fig-Infused Mezcal.
Use right away or keep in a tightly sealed container for up to a month at room temperature.

Make Ginger Syrup:
Combine all the ingredients for the ginger syrup in a small saucepan.
Bring to a simmer over medium heat. |
Whisk to dissolve the sugar and simmer for 5 minutes.
Remove from heat and steep until cool.
Strain out the ginger.
Use right away or keep in a tightly-sealed container in the refrigerator for up to 2 months.

Make Fig Margaritas:
Rub a lime or orange wedge on the rim of a cocktail glass.
Dip in coarse salt and fill glass with ice.
Fill a cocktail shaker with ice.
Add Fig-Infused Mezcal, Ginger Syrup, and lime juice.
Shake vigorously.
Strain into prepared glass.
Garnish with a California Dried fig, an orange wedge and a lime wedge. ¡Salúd!

 

Golden Fig Pimms and Lemonade

Ingredients

1/2 cup Golden Fig Lemonade
1 ounce Pimm’s liquor
Ice

Instructions
To serve over ice:
Pour the Pimm’s and lemonade into a highball style glass or tumbler.
Mix. Add ice.
To serve shaken:
Pour the Pimm’s and lemonade with 3 ice cubes in a shaker.
Shake and strain, pouring into a coupe-style glass.
