The History of Champagne:
In 1662, the creation of Champagne is credited to Mr. Christopher Merret, a scientist for experimenting on sugar to generate secondary fermentation. This experiment paved the way for the carbonation of the wine.
Also Dom Perignon, a monk who was in charge of the cellar at Abbey of Hautvillers is given tremendous credit for bringing in the practice of using thicker bottles and quality corks to prevent the bottles from bursting due to fermentation of the champagne. He also bears the credit for the various Champagne blends created by him.
The popularity of Champagne can be traced back to the French Courts as well as for special occasions and luxurious dinners! Today too we see Champagne being an integral part of all the celebrations.
The first American champagne was prepared using Catawba grapes near Cincinnati in 1842. Today new wines cannot have the label of “champagne” unless the companies existed before 2006. These companies could include “Champagne” to their sparkling wine if they mentioned their region too. I.e American Champagne, California Champagne, Italian Champagne, etc. since the 1890s, the California Champagne is called “the bubbly” and it also went by the label of “giggle water” during the 1920s.
While Champagne can be a costly affair, you can still add some pop and fizz by trying the many varieties of sparkling wine from the South of France, Italy, and California. These wines will serve your celebrations perfectly too without shrinking your pockets!
Champagne Day is celebrated officially on August 4, but Champagne Day celebrations on December 31st, New Year’s Eve has gained much popularity for the popular phrase “It’s Champagne Day”. It’s a common tradition to open up a bottle of bubbly to celebrate the New Year!
One of the key things people should know is how to open a bottle of champagne!
Here are some pairing ideas below. Many more can be found on our website, too, appropriate for all seasons – spring, summer, fall and winter!
- There are no set rules to pair food and Champagne. Pairings may reflect your own tastes and desires.
- It is recommended to start with finer, fresher Champagne wines first and end with more pronounced or sweeter Champagne wines.
- If several Vintage Champagne wines are served during a meal, it is recommended to start with the youngest wine first. You can pair the most aged wines with the most mature cheeses.
- Champagne and food pairings can highlight continuity (used to prolong the taste sensations of a dish) or contrast (used to offer different sensations to the dish).
- Brie, camembert or other creamy cheeses pair well with a non-vintage Champagne Brut Blanc de Blancs. The creaminess of the cheese will play off the wine’s dry style.
- Demi-sec Champagne, light and delicate, would pair well with a pear, blue cheese, and walnut salad, to help bring out the contrast of the salty and sweet.
- The heavier the food, the more acidic the Champagne should be. With Mac n’ Cheese, for example, use a milder cheese so to not overwhelm the Champagne.

Here’s a video about the wines of Champagne. The only wines that are genuine champagnes are those wines that were grown in Champagne, France! Every other sparkling wine that is not from the Champagne area in France is a “sparkling wine.” You can learn about it in this video!
Protecting the name “CHAMPAGNE’!
In 1882 they formed what is now the Union of Champagne Houses (UMC) to protect the name ‘Champagne’. Originally known as the Syndicat du Commerce des Vins de Champagne, the union prosecuted anyone who misused the name ‘Champagne’, whether in France or abroad, and it invariably won its case. ‘Champagne’ might have otherwise become the generic term for all sparkling wines.
The end of the 19th century brought a curse of a different sort: phylloxera. United against a common enemy, the merchant Houses rallied to the rescue of beleaguered growers and founded the Association Viticole Champenoise (AVC, or wine-growing association of Champagne). Growers and producers now work shoulder-to-shoulder within the structure of the Comité Champagne to achieve the AVC’s two-fold mission: protection of the appellation and the development of grape and wine technology.
UMC membership today comprises producers of the grandes marques: literally the ‘big brands’ (in name though not always in output). Their wines are blended from bought-in grapes from selected vineyards that contribute to the style of the brand.
About The Comité Champagne
The Comité Champagne is the trade association that represents the interests of independent Champagne producers (vignerons) and Champagne Houses.
Its mandate is to promote the vines and wines of Champagne through a broad remit that includes: economic, technical, and environmental development; continuous quality improvement; sector management; marketing and communications; and the promotion and protection of the Champagne AOC across the world.
The Comité Champagne is a joint trade association, established as a semi-autonomous public body in 1941.
The Comité Champagne was one of the first-ever regional wine committees created in France, the result of joint action at a local level. It is widely regarded as the model that others have since followed.
