It’s Memorial Day Weekend!.. and it’s time to fire up that barbeque! Here’s a great recipe from McCormick® spices.. and they have provided me with two great recipes. One recipe (shown below) is live today. The second recipe will be live tomorrow.
McCormick® spices are available at your local supermarket everywhere. I have been using McCormick spices in my cooking for over 12 years. I love the brand and the freshness of their spices! McCormick also has a great bank of recipes that you can find on the McCormick website.
GRILLED SALMON & ASPARAGUS FOIL PACKETS
Can’t go wrong with a meal of tender, flaky grilled salmon and fresh asparagus. McCormick® Grill Mates® Garlic, Herb & Wine Marinade keeps the prep easy and the flavor bold. This is one of my favorite recipes and even if I tweak the recipe with other kinds of marinades, I use McCormick spices in the marinade that I make up.
INGREDIENTS for 4 Servings

- 1 package McCormick® Grill Mates® Garlic Herb & Wine Marinade (adobo con ajo, hierbas y vino)
- 1/4 cup oil
- 2 tablespoons water
- 1 tablespoon white vinegar
- 4 salmon fillets, (about 4 to 6 ounces each)
- 1 pound asparagus, trimmed
- 4 sheets (12×12-inch each)- aluminum foil
INSTRUCTIONS:
STEP 1:
1 Mix Marinade Mix, oil, water, and vinegar in a small bowl.STEP 2:
Divide asparagus evenly among foil sheets. Brush with some of the marinade mixture.
Place salmon in the center of foil packets moving the asparagus to either side.
Brush salmon generously with the remaining marinade mixture.
Discard any remaining marinade mixture.
Bring up sides of foil; double fold top and ends to tightly seal packet.
STEP 3:
Grill over medium-high heat 10 minutes or until asparagus is tender and salmon is cooked through.
Garnish with lemon wedges before serving, if desired.Alternative Method of Cooking: OVEN -BAKED
To prepare in the oven, make packets as directed and roast 20 minutes in preheated 375°F oven.
