The secret is that you’ll use the Texas Crutch, which is wrapping the meat in foil late in the cooking, and then take the juices from the foil, add some apple juice, maple syrup, and make the glaze. It makes extremely tender, juicy, meat with a beautiful mirror-like sheen. More than one cook has written me to tell me that the recipe makes the best ribs they have ever tasted. The secret is real maple syrup.

I am sharing AmazingRibs.com’s youtube video about cooking these ribs with the Maple Glaze:
- Pure maple syrup ~ A must-have for this recipe, not the same as pancake syrup, no substitutions!
- Granulated garlic ~ Garlic is the perfect savory compliment to the sweet maple syrup.
- Black pepper ~ Adds a spicy kick to the glaze.
- Smoked paprika ~ The secret ingredient in most grilling rubs. It adds the perfect balance of flavor with a hint of smokiness.
- Kosher salt ~ A bit of salt is a must-have for grilling meat.
- Ground rosemary ~ Fresh or dried rosemary works great in this recipe.
If you are injecting the glaze, ground rosemary works best.
- In a saucepan, add maple syrup, garlic pepper, paprika, salt and rosemary.,
- Whisk together and cook over medium heat, bringing mixture to a boil.
- Stir frequently and cook 3-5 minutes more
Baste the ribs with the glaze with a basting brush.
Put the ribs into the oven and let it cook according to your recipe.
