Spring holidays fall earlier this year and your day might be cooler than you would have liked! It will be here in LA, that’s for sure. Courtesy of Nieslen-Massey Extracts you can warm up the holiday meal by incorporating the bright, sunny, refreshing flavors of spring into an Easter Brunch.. This is also ideal for that perfect spring day when it’s warm & sunny as well as Mother’s Day celebrations.
Start with an array of fresh tropical fruits. If you can’t find them locally or if they are too pricy, find what you can in the freezer section. Sliced fruits up and layer them with a sweet, creamy filling scented with Nielsen-Massey Pure Orange Extract . Made from the finest oranges, this extract enhances the fruits’ natural flavors. Guests will appreciate the light dessert, which brings a little extra color to what may be a colder than usual holiday.
Tropical Fruit Parfait
8 ounces cream cheese, softened
3 tablespoons confectioners’ sugar, sifted
2 to 4 tablespoons whole milk
1/2 teaspoon Nielsen-Massey Pure Orange Extract
Fruits featured in the photo include: diced mango, pineapple, grapes, strawberries and whole blueberries.
Other options include melons, mandarin oranges, red grapefruit, cara cara or blood oranges, bananas and frozen berries. Also if you want to toss in a little green, you could use chopped cucumbers too for a cool refreshing counterpoint flavor.
Combine the cream cheese, confectioners’ sugar, milk and orange extract in a mixing bowl and beat using an electric mixer.
Alternate layers of the cream cheese mixture and the fruit in a trifle dish or parfait glasses by either spooning the cream cheese mixture or piping with a pastry bag.
Note: Approximately 3/4 cup of each fruit choice allows for 2 tablespoons per layer in parfait glasses.
Serves 6
For those on restricted diet, you can tweak this recipe up. You can try a whipped cream cheese or try plain Greek yogurt for a rich texture with a tangy taste. Also you could use a 2% milk along with the yogurt. Make sure you have lots of colorful fruit

Sparkling Rose & Orange Cocktails.
One bottle of Prosecco or good Champagne
Fresh or frozen strawberries or raspberries.
Nielsen-Massey Orange Water Extract– approximately 1 T
Nielsen-Massey Rose Water Extract– approximately 1 T
and a bit of soda water.
Toss the fruit into a blender or a food processor after they have thawed a bit and are soft but not mushy.
Pour out the fruit into tall champagne flutes– a couple of Tablespoons.
Add in one Tablespoon each of the Rose Water and the Orange Water
Fill the glasses with the prosecco or champagne.
Enjoy the rest of your day!
