Let’s start this post with some honesty and authenticity. I have never tailgated. Mostly it’s because when I was big into college football, I didn’t often have a csr OR the tickets for decent seats were sold out. I don’t particularly follow pro football so that says it all. I am more of a hoops girl and also sports like beach volleyball, tennis ( and more). However if I were going to tailgate (and I know many who love to do it), I would use Busha Browne’s seasonings for burgers, chicken, ribs or meats like tri-tip. It’s an all purpose collection and would really put the sizzle into Halloween too!
Busha Browne’s sent me some recipes– which I have used one (ribs) but not the chicken (yet!).
BUSHA BROWNE JERK SMOKEY BBQ RIBS RECIPE
Ingredients:
2 full racks of pork ribs – trimmed & cut in half
4oz Busha Browne Authentic Jerk Seasoning Rub
6oz Busha Browne Jerk Smokey BBQ Sauce
2 tbs olive oil
Method:
Rub pork ribs with Busha Browne Authentic Jerk Seasoning Rub and allow to marinate for 1 hour, preferably overnight. When ready to start cooking, rub ribs with olive oil and wrap with aluminum foil and seal completely. On your BBQ grill, place ribs over indirect heat for 1 hour.
After the hour, remove ribs from the foil and baste with Busha Browne Jerk Smokey BBQ Sauce and cook for an additional 15 minutes over direct heat then turn and baste often. In your oven, cook for 1 hour at 325° then remove from foil and baste with Busha Browne Jerk Smokey BBQ sauce and turn heat up to 375° for an additional 15 minutes. Turn and baste repeatedly.
Busha Browne Pukka Hot Pepper Sauce with Crispy Oven Fried Corn Flakes Chicken Recipe
Ingredients:
2 1/2 lbs chicken legs and thighs, bone in, skin removed (about 8 pieces)
1 cup flour
1 tbsp cornstarch
1 1/4 cup ginger ale or seltzer
3/4 tsp garlic powder
4-5 cups cornflakes
Nonstick cooking oil spray
Salt and pepper
1 1/2 tbsp Busha Browne Pukka Hot Pepper Sauce
2 mixing bowls, baking sheet
(2-3 eggs may be used instead of the ginger ale)
Method:
Preheat oven to 400 degrees F. Pour the cornflakes into a plastic zipper bag. Use a mallet or the back of a large metal spoon to pound and crush the cornflakes into smaller pieces. In a medium mixing bowl whisk together the seltzer or ginger ale, flour, cornstarch, 1 tsp salt, garlic powder, Busha Browne Pukka Hot Pepper Sauce till smooth. The batter will bubble at first, then settle.Pour the crushed cornflakes into another bowl. Keep an empty plate handy for the chicken. Working one piece at a time, dip the chicken into the batter. When you pull the chicken out of the batter, let any excess batter drip back into the bowl. Gently roll in crushed cornflakes to coat. Place the cornflake coated chicken onto the empty plate. Repeat for remaining chicken pieces. Spray a baking sheet generously with nonstick cooking oil spray. Place chicken pieces onto the sheet, evenly spaced. Spray the tops of the chicken pieces with a light, even layer of cooking oil spray. Place chicken into the middle rack of the oven (not the top!) and bake for 45-55 minutes till golden brown, crispy and cooked through. Sprinkle chicken with salt and pepper to taste. Serve hot.
