If you aren’t familiar with the vegetable known as jicama, you are about to get a crash course in it. It’s a rather strange turnip-like vegetable.
When you see it in a grocery store, it will look like the brown vegetable on the left. To make it edible, you have to peel this vegetable which is quite a challenging task because jicama is not a soft vegetable but quite hard and it has lots of bumps and “valleys” that you need to peel around OR you cut off the highest points and keep the larger pieces. When it’s peeled, it looks like the white side because the flesh is white and very crisp. It’s like a big potato that when raw is very crunchy and slightly juicy. When cooked it softens up a bit.

It’s not easy to peel jicama. I found a vegetable peeler to be a difficult tool to use in peeling jicama (not at all like a potato)! I wound up using a sharp knife to cut away most of the skin to make it edible- and working slowly so that I wouldn’t cut myself.
