Julie.. you have gotten super creative. I have reviewed and ‘tested ” many kombuchas.. NO ONE has done anything like this.

1. What made you dive into probiotic mocktail? 

  • In 2001, I was sick with a debilitating autoimmune disease; as a result, I could not consume alcohol at social events. At this time, I found there was a necessity of creating a non-alcoholic social beverage you could enjoy. Thus, I developed the world’s first probiotic mocktails.

 

2. How long did it take to get the first one done the way you wanted? What flavor was it? 

  • I was quite ambitious. In 2015, I had a concept for a fermented cocktail mix. I came out with five formulas for the mixes and realized they were simply not ready for the market. It took me running out of capital, before I understood the marketplace, and reinvent FermFatale. Schrubucha came out in 2019 and it was in Cosmopolitan and Madame Mule, Mojito, and Margarita. 

 

3. How many of your friends knew that you were playing “mad scientist”

  • I never told anyone what I was doing until I released the flavors. 

 

4. How long did it take for you to come up with a low-sugar kombucha? (I have tried many that had so much sugar!)

  • Several years, close to three years. It was a time of trial and error. The actual reason they are filled with sugar is that companies incorrectly assume that is what the consumer wants. It requires patience in the fermentation process, which is what we pride ourselves on at FermFatale.

 

5. How did you come up with the idea of creating Kombucha-based cocktails (mocktails)?

  • I wanted to come up with a gut-healthy social beverage. The naturally occurring compounds found in Kombucha are not found anywhere else in nature. It is the health benefits that gave me the idea.

 

6. Was there ever a situation in your product development that had you wondering if you should give up on that presentation or flavor because it didn’t quite work?

  • The only big challenge has been with our custom-glass bottles. There are practically no machines made that auto-label bottles. The bottles were inspired by classic Italian glassware, which was inspired by my grandfather, an Italian immigrant who taught me all that I know about fermentation. The bottles are an extremely sustainable resource, which is important to me to ensure the preservation of our environment. For much of the time, I individually hand-labeled the bottles–that is how much I care.

7. What’s your favorite cocktail out of all of these great flavors?

  • Margarita is my favorite. It is so incredibly versatile, I will drink it straight out of the bottle, or pour it in a glass with salt. It is a tremendously diverse drink that is ultimately refreshing
