Thanksgiving Rewind: Food (Vegetarian & Otherwise), Fitness, Sales and TV!

I am a bit behind, thanks to Thanksgiving dinner! We did a dinner disruption by going Italian! With a vegetarian in the immediate family, it makes cooking turkey harder because I have to cook more stuff for the very picky vegetarian in our midst. Don’t get me wrong, I love veggies and I eat more than my share. The vegetarian happens to not like most vegetables and is resistant to trying new things. I had recently done a slow-cooker lasagna and it won my veggie lover’s heart. (She killed it in 3 days!) I figured that a regular lasagna was the way to go rather than a slow-cooker version. I wound up making a lasagna almost from scratch and while it was great, it took a long time to put together– and even longer time to clean up. In my house, one does not live by lasagna alone, but (spinach)  salad and toasted bread too along with dessert (cherry pie and fruit tarts) is more required on holidays like Thanksgiving!

This is the lasagna after dinner and after I put some for “immediate use” left-overs in the frig. The balance that you are looking at was divided into several containers and frozen. It’s all about cooking smart- providing one has the space in the freezer!

The recipe for this lasagna is found on a KROGER N0-Boil Lasagna Noodle box which required the ricotta, mozzarella to be mixed together and included 2 eggs beaten in the recipe. That’s unusual since I remember my mom’s recipe (vaguely) but I adapted it to the vegetarian requirements  leaving the meat out of the recipe, substituting  the basil for garlic and minced onion flakes  adding fresh leaf spinach and fresh zucchini sliced really thin courtesy of my latest purchase- a new Kitchenaid Food Processor to replace a very ancient Moulinex Food Processor that was dying fast!

Last night I saw Star Wars: The Force Awakens (the one with Daisy Ridley, John Boyega, Chewbacca , Harrison Ford, and more. I wish we had recorded it since I fell asleep during the last 40 minutes.

All I can say is THANK YOU for your patience. I sort of played hooky a bit. I took my dog for an early walk this morning and went from the walk to my 40 minute BarreAmped FIRE workout!

  1. That lasagna looks really delicious. Italian is a great way to go especially for the picker amount us. Well done!!! I have not tried the slow cooker lasagna before but now think I will. I do lots of our food that way, so why not pasta? Yum! Thanks for the tip!
