Great New Cocktails to Celebrate Cinco de Mayo: Horchata Sips and Mezcal 8 Viboras

It’s almost Cinco de Mayo and maybe you started early. Well I have a few more cocktails for you and here’s one that’s really cool — and worth the effort to make it.

Forget the typical– and sugar-loaded– margaritas. This Cinco de Mayo, break out an original classic to celebrate the day- the Horchata. Iced Horchatas are a contemporary spin on a classic Mexican summer beverage. This delightfully refreshing version features rice and cinnamon, and is a great make-ahead drink for entertaining on this festive holiday.

horchata

This is a LARGE jug of Horchata mixed up. You aren’t making that much with this recipe!!

Iced Horchata: — This is the alcoholic version. Should you wish to skip the rum, then you have the perfect one to mix a rum extract or a spiced cider into the mix.

· 4 cups hot water

· 1 cup white rice, rinsed and drained

· 2 cinnamon sticks

· 1 cup granulated sugar

· 1 cup Coffee-mate Natural Bliss Sweet Cream

· 4 ounces spiced rum (optional) (Cruzan Spiced Rum or Sailor Jerry’s Spiced Rum)

· Ice cubes

· Ground cinnamon

-COMBINE water, rice and cinnamon sticks in large bowl; cool. Cover; refrigerate for 2 hours or overnight.
-REMOVE cinnamon sticks.
–Drain the rice and reserve the soaking liquid.
— Pour rice into food processor or blender and cover.
— Process on high for 3 to 4 minutes.
— Add reserved soaking liquid and sugar and process for 2 minutes.
— Strain mixture through a cheesecloth or fine sieve into a pitcher, pressing the rice solids until only a dry paste remains; discard paste.
Stir Coffee-mate and rum into mixture. (If you don’t want alcohol, then you can use rum extract or spiced cider)
-SERVE over ice. Sprinkle with cinnamon.

Ok– now you are thinking — where is the booze? This isn’t a cocktail. Yes it can be. You can either drink it sans alcohol which is better for your body and your liver or you can spike it gently with a spiced rum like Cruzan Rum or Sailor Jerry’s Rum — or you can go entirely into a different direction with some Onyx Moonshine– a distilled white spirit here in the US made according to a generations old recipe.
