Busha Browne Makes Good Food GREAT with Killer Sauces & Spices! #BBQ #Recipes

Looking to cook up something for this weekend (or next)? How about Mother’s Day, Father’s Day or Graduation?
Busha Browne sauces and spices have you covered with great recipes that are a snap to put together.
Disclosure: I have received some Busha Browne products to test out and/or create recipes. As you all know, my opinions are my own.
Now that I have said that, I can tell you I am still playing with these spices and sauces. I will tell you that the Pukka Hot Pepper Sauce is no namby pamby sauce. It’s HOT! Approach with caution and care — the first time. I find that using it in different ways is definitely fun — especially in cocktails. I will have more tweaks on various recipes SOON!

Busha Browne Jerk BBQ Slider Recipe

Ingredients:
4 ounces Busha Browne’s Jerk Smokey BBQ Sauce

2 pounds premium ground beef (80 percent lean/20 percent fat)
1 tsp sea salt
1 tsp of fresh garlic minced
2 ounces of mayonnaise
1 dozen slider rolls or dinner rolls
6 ounces romaine lettuce leaves
3 medium tomatoes – cut into 1/8-inch slices
2 medium purple onions – cut into 1/8-inch slices

Preparation:
Combine 2 ounces of Busha Browne Jerk Smokey BBQ Sauce, beef, salt, pepper, garlic, and olive oil. Mix gently with a fork. Shape the meat into 12 patties and place into your freezer while preheating the barbecue grill to med/high heat.
Oil the grill just before putting the patties to cook for 5 to 6 minutes per side, depending on your preference for medium to well done. Check your patties’ temperature with a thermometer before removing them from the grill. (The USDA recommends a minimum internal temperature of 160 degrees for ground beef.)
Combine mayonnaise and remaining Busha Browne Jerk Smokey BBQ Sauce and dress top and bottom of slider rolls.
Dress sliders with lettuce, tomato, and purple onions. Makes 12. Enjoy!

Busha Browne Jerk Shrimp Salad Recipe

1 lb shrimp (16-20) peeled and deveined.
Juice of two limes
1 tbs olive oil, plus extra for brushing the grill

2 tbs Busha Browne Spicy Jerk Sauce
1 head fresh romaine lettuce
1 carrot julienned
1 cucumber — seeded & julienned
1 green papaya — julienned
3 med tomato’s — seeded & julienned
3 tbs italian salad dressing
1 tbs cherry (maraschino) juice
Chopped mango can be added for color and flavor to taste

Preparation:
Wash shrimp with lime juice — add Busha Browne Spicy Jerk Sauce and olive oil allow to marinate 1 hour. While shrimp marinates — wash & prepare salad ingredients and set aside.
Prepare cherry dressing — combine italian dressing and cherry juice and shake well to combine.

Grill shrimp over med/high heat until cooked through, toss salad with dressing and place shrimp on top.
Cover bottom of roasting pan with remaining olive oil and place salmon skin down into pre-heated oven at 375°.

Bake for 30 minutes — basting with Honey Jerk BBQ Sauce for the last 10 minutes of cooking.
Remove from oven, squeeze juice of remaining lime over salmon.

Busha Browne Jerk Fish Wraps with Chipotle-Lime Slaw Recipe (Aka Fish Tacos in Flour Tortillas)

Ingredients:
4 halibut or salmon fillets or 2 of each (with skin), about 6 ounces each and 1 1/2 inches thick
Vegetable oil
6 flour tortillas (10 to 12 inches)

Rub Ingredients
1/2 teaspoon ground cumin
1/2 teaspoon kosher salt

1/4 teaspoon Busha Browne Pukka Hot Pepper Sauce

1/4 cup of Busha Browne Authentic Jerk Seasoning Rub
1/4 teaspoon ground cinnamon

Slaw Ingredients
3 cups very thinly sliced green cabbage
1/4 cup coarsely chopped fresh cilantro
1/4 cup mayonnaise
2 tablespoons fresh lime juice
2 teaspoons granulated sugar
1 teaspoon canned chipotle chile in adobo, minced
1/4 teaspoon kosher salt

Cooking Directions:

Rub:
In a small bowl, mix the rub ingredients. Lightly brush the fillets with oil, and then apply the rub evenly. Cover and set aside in the refrigerator.

Slaw:
In a large bowl, combine the slaw ingredients and toss to coat. Set aside until ready to assemble the wraps. Prepare the grill for direct cooking over high heat.

Fish and Tortillas:
Brush the cooking grates clean.
Grill the fillets over direct high heat with the lid closed as much as possible.
After about 4 minutes, when you can lift them with a spatula off the cooking grate without sticking, turn the fillets over and cook them for 2 to 3 minutes until they are opaque in the center.
Transfer to a plate. Warm the tortillas over direct high heat for 30 seconds to 1 minute, turning once.


To assemble the wraps/tacos

Break a fillet into large chunks gently with a fork. Arrange on one half of a warm tortilla (microwaving works or wrap in foil tightly and put in oven as well as the BBQ), then top with some of the slaw.
Fold up the bottom of the tortilla onto the fish chunks. Fold in the sides and continue rolling to the end. Cut the wrap in half if you choose. Serve warm so that the slaw stays fresh and crisp!

  1. I am curious about the steak sauce on veggie burgers and loaves. I am also interested to hear about the hot hot cocktails you are concocting with the puka hot sauce.

  2. Pam I was thinking of using the Pukka Pukka sauce in a bloody mary-ish type of concoction. I think it would add a bit of zip to it that tabasco just doesn’t have along with a sprinkle of one of the spices.
    It’s got that Jamaican/Caribbean feel/flavor to it. I have lots of foodie things to report on!
