Scorching Summer Days Require Creativity to Stay Cool: Terra’s Kitchen DIY Ginger Melon Ice Pops!

It’s been a hot and steamy summer. If you are seeking for some fast, easy – and inexpensive- cures for this hot weather, you are in luck!

This DIY ginger cantaloupe popsicle recipe is the delicious, refreshing treat that you need in your life. The healthy, fruit-filled snack is a great way to satisfy your sweet tooth – and the best part is they are guilt-free!

 

Ginger Melon Ice Pops!

INGREDIENTS & TOOLS:

3 slices of fresh ginger***
1/4 cup sugar
1 ripe cantaloupe**
Sliced strawberries (optional)
Frozen pop molds and wooden sticks

 

DIRECTIONS

In a small sauce pan, add the sugar and 1/2 cup water over medium heat.
Cook just until the sugar has melted. Remove from heat and drop in ginger.
Set aside until cooled. (Remove ginger when ready to use!)
Slice cantaloupe in half and scoop out seeds.
Spoon cantaloupe flesh into a blender. Blend until smooth.
Add just enough of the cooled ginger syrup to sweeten as desired.
Save the remaining syrup for another use.
Pour into frozen pop molds and freeze overnight.
For a variation, push a few sliced strawberries* down into the popsicle molds before freezing.

*Fruits you can try in these ice pops include blueberries, blackberries, small chunks of apricots, pitted & halved cherries
small pieces of pineapple and – of course- strawberries!

(Stevie tip: **You can use other melons if you can’t find a ripe cantaloupe. Honeydew, Persian melons and other melons make a great substitute for cantaloupe, particularly if the cantaloupe isn’t fully ripe!)

*** If you don’t like ginger, you could try other things like cayenne, cinnamon or  Tajin Mexican Fruit & Spice seasoning.
