It’s been a really hot last couple of weeks – some days hit 100F at the factory! Thankfully, our A/C stayed strong and we didn’t lose power – for once! Now that the heatwave is over, we’re finally shipping again, which means we can finally send out this newsletter and announce our new bars!
Introducing our newest origin: India!
Many chocolate makers have started making bars from India, but we weren’t satisfied with the quality of the samples we’d been sent. One day, Dan O’Doherty told us about a project he’d been involved
with in the southern part of the country in an area called Kerala. We’ve been working with Dan for several years now, and his work has produced some of the finest cacao beans we work with, such as our
Ucayali from Peru and Costa Esmeraldas from Ecuador. He’d been working with Kerala growers Luca Beltrami and Ellen Taerwe of GoGrounds and Spices for a while, and we’re excited to introduce this
new harvest of mountainous cacao, harvested in 2021.
Tasting notes: citrus blossom, fudge, spice
And the return of an old favorite, Vietnam!
We first learned of Marou back in 2011 when we met Vincent and Sam at the Northwest Chocolate Festival in Seattle. Starting in 2014, we got small shipments of cacao directly from them to try our
hand at making chocolate from their incredible cacao. Our favorite of their different origins around the Mekong Delta was Ben Tre, although tasting the bar a couple of years later, we felt we could do
better. Finally, we got a small number of bags from Ben Tre a few months ago and made our first new batch in almost 7 years! We’re really excited with how it came out with tasting notes of cinnamon,
banana, and a hint of zesty lemon on the finish!
Since we only got a small amount of cacao, these bars will go quickly, so much so that we can’t even offer them wholesale – so the only way to get this bar is by us directly.
