This is day one of the 12 drinks of Christmas and each day will feature an array of wines or cocktails (featuring a key spirit) for the duration of the holiday season. So the point of this is to get you into the holiday spirit (pun intended) but also to have friends over or go out for a cocktail. Thinking that this has been a pretty brutal couple of weeks, I would kick this seasonal series with something that might make you smile– cocktaiils from Hawaii. The Hyatt Regency Waikiki Executive Chef Jeff Wind provided us with recipes for three shave ice type of cocktails. We are hoping that it brings some sunshine and warmth to your holiday- even if it’s cold, raining or snowing where you are. The three drinks are: Waikiki Chill, Hula Girl, and Pineapple Passion
Same starter recipe:
Place approximately two cups of ice in a food processor fitted with the grater blade, and pulse (shave) to a fine texture. Be careful: too long in the processor and the ice will turn to powder.
Using an ice cream scoop, transfer a cup of shaved ice into a chilled martini glass.
Drizzle with a favorite combo of flavors to create a Hawaiian-inspired cocktail:
o Waikiki Chill –
Add this tart-sweet mix to shave ice:
2 oz gold rum,
½ oz Curacao,
½ oz Orgeat syrup (almond-flavored),
¼ oz simple syrup,
and juice of one fresh lime.
o Hula Girl
Combine I Cup simple syrup with 1 Cup fresh strawberries to make fresh strawberry syrup.
Puree, strain, and pour over shave ice.
Add 2 oz white rum or vodka.
o Pineapple Passion –
Combine 1 Cup water with ¼ cup sliced fresh ginger in a saucepan.
Simmer ginger syrup for five minutes, cool, and strain.
Sprinkle over shave ice.
Add 2 oz pineapple-flavored vodka,
1 oz fresh pineapple juice.
For the adventurous, rim the cocktail with Li Hing powder for a salty-sweet kick.(If you know where to find this, please let me know. I have NO clue).
