Memorial Day = Awesome Sips: Summer 2014 Mixology + Cocktails from Averna + G’Vine!

I love holiday weekends. I love weekends entirely too much because it allows me to get crazy in the kitchen whipping up some concoction whether alcoholic, ridiculously healthy and alcohol-free or something exceptionally domestic like food! Here's some interesting sips for this last day of this holiday.
Here is a cocktail I whipped up Saturday afternoon. I was playing with some Malibu Rum Sparkler (Malibu Rum reconfigured as a sparkling wine- but it's still rum!) that I had been sent. YUMMY stuff but potent too.

First Taste of Summer (Stevie Wilson Original Creation!) (makes about 2-3 cocktails)
Measurements are approximate here.

watermelon cocktail

Ingredients:

Chopped up pieces of watermelon — at least 1.5 cups
or more. (Depends on how big your pieces are)

One nectarine or peach (ripe)

One lime or lemon (or both)

One bottle of Malibu Rum Sparkler (or if you want the PEACH Malibu Rum Sparkler, that will work too)

One bottle of club soda.

Puree the watermelon in your blender or food processor. Do not JUICE it! The pulp and juice are essential!
You should have about 2 cups A little more or less won’t hurt.

Slice the lime into halves and use one half for juice. The other part is for garnish. You know how much you need

Slice the nectarine or peach into medium size slices. These are garnish too. Thread them with some of the slices of lime onto a toothpick
OR onto a skewer.

Instructions:
Get a healthy sized cocktail or wine glass for your drink.

Squeeze in lime or lemon juice into the bottom of each glass.

Pour in about 4-6 oz of watermelon puree into each glass.

Stir to mix the juice into the puree.

Carefully open the Malibu Rum Sparkler bottle. It’s sealed just like a champagne bottle.
Pour about 2 shots of Malibu Rum Sparkler into each glass. The cocktail will fizz up once the spirit hits the watermelon puree.
Stir the cocktail. The layers will develop over a few minutes. If you don’t have as vivid color, then maybe you need more puree!
Add one slice of lime to the cocktail. Add your garnishes!

These measurements are based on your taste preference. We didn’t realize that Malibu Rum was so potent,
so we had to add more puree to the glass.

If you want more liquid in the glass, add more Malibu Rum Sparkler or if you you want more bubbles and fizz but not alcohol, try club soda!
