Fuego ‘Goes Green’ With St. Patrick’s Day Weekend Brunch Specials!

The luck of the Irish can be found at this open-air modern, Latin infused indoor-outdoor restaurant and lounge at Hotel Maya as Fuego presents a variety of Irish themed and traditional dishes for its St. Patrick’s Day Weekend Brunches on Saturday, March 19 and Sunday, March 20 from 11 a.m. to 4 p.m. Live entertainment will be featured on the patio area from 11:30 a.m. to 3:30 p.m.
Highlighting the Irish culinary theme, Executive Chef Victor Juarez’s St. Patrick’s Day Weekend brunches:
The modern Latin-infused restaurant is going green with envy for Irish Stout Beer Fondue, Shredded Corned Beef Brisket Tacos, and Irish Roasted Filet of Salmon, along with specialty Irish drinks.
Appetizers:
–Fuego Guacamole and Traditional Salsa, with Fresh Avocado, Onions, Chile Serrano, Cilantro, Tomato with Fired Roasted Tomato Salsa and Tortilla Chips;
Irish Stout Beer Fondue
Incredibly delicious and while others will ask you to share, tell them to order their own!
–Irish Stout Beer Fondue with Four-Cheese Fondue, Guinness, Spinach, and Mini Baked Pretzel.
—Taco Callejeros includes Shredded Corned Beef Brisket, with Braised Corned Beef Brisket, Onion, Cilantro and Chile Serrano Cream.

—Grilled Guinness Cheddar Melt with Shredded Braised Brisket, Guinness Stout Beer, Cheddar Cheese, Sauerkraut, and Artisan Bread;
–Avocado Toast with Grilled Rustic Bread, Olive Oil, Smashed Avocado, Red Onion Honey Jam, Tomato, and Arugula; add Smoked Salmon for an additional cost.
Hot Entrees

–Braised Corned Beef Brisket with Braised Cabbage, Bacon, Onion, Garlic Boiled Red Potatoes, Carrots, Sour Cream;
–Irish Roasted Filet of Salmon with Whiskey, Thyme, Lemon, Garlic, Roasted Cabbage, Asparagus, Potatoes, and Cream.

–Irish Whiskey-Raisin Bread Pudding with Jameson Irish Whiskey, Tahitian Vanilla Ice Cream, and Cinnamon Whipped Cream;
–Key Lime Tart with Flaky Pastry Tart Shell, Creamy Lemon Curd, and Liquor Scented Cream.
This entire menu sounds so yummy that I would have trouble trying to find just a few things to eat. I would want to try some of everything!

Fuego, the modern, Latin-infused indoor-outdoor restaurant and lounge, offers a unique seaside setting featuring 13-foot-tall glass walls that fully retract with seating on the patio area.
Fuego restaurant is open daily from 6 a.m. to 10 p.m. Sunday to Thursday and 6 a.m. to 11 p.m. on Friday and Saturday.
